Do we have to freeze the current system during the migration?

No. The whole point of a strangler-fig migration is that the legacy system keeps running and keeps serving traffic while each piece is replaced behind it.

What if the legacy system has no documentation?

Normal, not a blocker. The anti-corruption layer is built by observing real behavior and real data, not by reading documentation that does not exist.

How do you decide what to migrate first?

The slice with the most operational risk or the most blocked roadmap items, so the first proof point is also the first real relief.
